Limoncello Biscotti
I love biscotti. I could eat it everyday. You can make biscotti with so many variations. So I wanted to make some the other day and wasn't sure what kind. I was missing the liquid ingredient. So I looked in my fridge and there are 2 bottles of Limoncello. One is creamy and the other is clear.
I have made Limoncello cake and it was awesome. So why not in biscotti? I decided to use the creamy version, just because.

Fall Pumpkin Bars
I was cleaning up some of my old recipes and came across the pumpkin bars. They appeared in a Taste of Home in 2004. I don't remember ever making them, but I had all of the ingredients on hand so I said, "why not today". Do you save old magazines that have recipes? I could not believe how many I had and that was not counting all of my cook books.

Lemon Blueberry Scones
I must admit that I have no will power when it comes to scones. I don't care what flavor they are, they are just so yummy. When I was teaching, we had a cafe bar downstairs that always had scones and of course. most days I was down there buying one. Now, I try not to eat many scones but once in awhile, I just want one. Are you a scone addict like me?

Fresh Peach Hand Pies
It is peach season in Georgia. On our trip to the farm last week, (you can read about that here) we brought home so many peaches. Now it was time to make stuff with peaches. First up was some peach hand pies. I have a few peaches that were ripe and needed to be used soon, so hand pies came to mind. Little pockets of "yumminess".

Fresh Peach Sorbet
It's summer time and that means fresh peaches. I am lucky because my brother-in-law manages a peach farm in the summer and pecans in the fall. I love making lots of peach dishes but I wanted some sorbet. Most of the recipes that I found had way too much sugar in them. I am trying to cut down on sugar so I thought I wouldn't be able to find one that would work.And then I found it! One from Taste of Home. Can you believe that there are only 4 ingredients? It turned out so yummy.

Apple Mini Pies
My in-laws called and said they were coming over and I didn't have time to go to the store. All I had was one crust that I hadn't used and 4 Gala apples. I knew I didn't have enough to make a whole pie so I thought of just a few small ones for dessert. Mini desserts are just as good! Right?

Key Lime Pie Cupcakes
When your key limes are all ripening at the same time, make cupcakes. I have made lots of cupcakes in my time, but these were the best ever. Maybe, because I love the flavor of key limes. I sent them into my husband's work, and they said, "they were over the top".
The key lime filling was amazing and the graham cracker topping took them over the top. The best part is you start with a box cake mix.

Easter Mini Cheesecakes
Cheesecake is just one of those desserts that you can make in so many ways: Chocolate, New York style, Chocolate Peanut Butter, Macadamia nut. Are you getting my drift here? Endless possibilities!
Once a month I bake for my husband's office. It gives me a chance to make desserts which is my favorite thing to do, but hate having too much dessert around.
These Easter Mini Cheesecakes came from Kraft. I thought they would be great to send in and a little Easter thrown in as well. They are super easy to make.
