Easy Easter Blueberry Muffins from a Box
You start with a cake mix and add some additional ingredients.
I decorated them with some Easter sprinkles, but you could have used jelly beans, peeps, or even left them plain. I like a little frosting!
Fresh out of the oven, they even look good plain. I didn't use liners, but you certainly could.
You could also add blackberries instead of blueberries.
I am sending these into work with my husband. I didn't take a picture of the inside of these muffins since they were going to work with him.
If you need a little breakfast muffin, then these just might be what you are looking for. They are super easy to mix up. You could also try the Jam Muffins that I made. Either one would be a great breakfast treat.
Cake Mix Blueberry Muffin Recipe:
Ingredients:
1 box yellow cake mix
1 teaspoon baking powder
2 tablespoons all-purpose flour
2/3 cup milk
1/3 cup vegetable oil
3 large eggs
1-2 cups fresh blueberries
Directions:
Preheat oven to 375 degrees. Mix dry cake mix (don’t follow directions on the box), baking powder, flour, milk, oil, and eggs together thoroughly. Fold in the blueberries very gently, only stirring a couple of times so that your batter doesn’t turn blue/purple. Pour into lined muffin cups filling about 2/3 full, and bake for 15-20 minutes. Makes 16-18 muffins. Add powdered sugar frosting and decorate.
