Cheesy Scalloped Potatoes
Cheesy Scalloped Potatoes
Make classic scalloped potatoes extra creamy with cheese. We love scalloped potatoes, but this time I decided to make it a little different. Nothing like bringing together melty PHILLY Cheese, grated Parmesan and thinly-sliced red potatoes in this creamy, cheesy dish the whole family is sure to love.
I was lucky to get one picture of these potatoes before they dived in.

Excellent Side Dish - Melting Potatoes
Excellent Side Dish - Melting Potatoes
Every once in awhile, hubby actually looks at recipes. So he says, "we need to try Melting Potatoes". They taste like poutine. I think poutine is one of those dishes that you either like or you don't. We love it. Poutine is a dish that includes french fries and cheese curds topped with a brown gravy. It originated in the Canadian province of Quebec. When we are in Vermont, we always head to our favorite restaurant to get some poutine.

Peas and Pancetta Side Dish with Fresh Parmesan
Peas and Pancetta Side Dish with Fresh Parmesan
I don't know about you, I love to find different sided dishes. Peas are one of our favorite vegetables and we also love pancetta, so this seemed to be a great combination.
Many of these side dishes add onions to them and although I love onions, my stomach does not. So no onions in my dish, I added some fresh Parmesan cheese on top.

Honey Dijon Baked Carrots
So the other night I started to pull all the ingredients together. Of course it was around 5:30 when I decided to do this. I had seen a package of what I thought was cauliflower in the freezer so I would be good to go.

Making Fried Green Tomatoes
Since we were going on vacation, I decided to pick what was still on the plants and make my husband some fried green tomatoes.
I know that tomatoes are good for you but they are not for me. Growing up, everyone in the family ate them except for me. I don't even like ketchup. I just don't like the taste of tomatoes.

Black Bean and Corn Salad
There are a lot of black bean and corn salads out there but I adapted a couple recipes to come up with my own version.
