Welcome to the party and Happy St. Patrick's Day. Do you celebrate the day? We are having corn beef and cabbage for dinner at my brother-in-laws. That's about the extent of my celebration.

I love St. Patrick food, so I do make baked goods, but that's about our celebration too. I get the smallest corned beef I can find (only 2 of us) and make baked corned beef ~ using just enough leftover corned beef, potatoes, carrots & cabbage to make hash for dinner (skipping a night) with an over-easy egg on top. Just brush off the shamrock sprinkles and the cookies are good to go afterwards too! .... onward to Easter which is fast on the heels!
