Southwest Turkey Burger and Kale Chips

Don't get enough green vegetables?  Have you ever wondered what to do with kale? Kale is a nutritional powerhouse. One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. Wow, move over spinach!

This turkey burger and kale chips makes a super healthy meal with great taste.
Sorry these pictures are a little dark. Since the time change, by the time we sit down to dinner, it is dark and hard to get great photos.

This turkey burger has so much flavor. The turkey burgers are called Jennie-O Jalapeno Jack Turkey Burgers. They have a little kick, but not much. You could always get the plain ones. Add some turkey bacon, jack cheese and
guacamole dip (I used home made). All of the flavors together are delightful.

You can grill the turkey burgers or fry them in a skillet. Either way they are good.
Eclectic Red Barn: Kale Chips=
Kale chips are easy to make. The recipe is on the kale package. Put the kale chips into a bowl, add some olive oil and sea salt and toss. Place on a baking sheet and bake. You can even sprinkle them with Parmesan cheese.

They come out nice and crisp and make a great alternative to fries.

Ingredients:

8 slices turkey bacon

2 oz. Cabot Vermont Pepper Jack Cheese, shredded

½ cup Guacamole dip (I made my own)

French hamburger buns or your favorite ones

7 tablespoons fat-free sour cream

1 tablespoon smoked paprika

4 frozen Jennie-O Jalapeno Jack Turkey Burgers


Directions:

1. Preheat grill. Cook bacon following package instructions. Shred cheese.

2. Spread guacamole on top half of buns. Combine sour cream and paprika;spread on bottom half of buns.

3. Grill turkey burgers following package instructions.

4. Top buns with burgers, bacon, and cheese. Assemble and serve.

  6. The burgers look yummy! We have a long standing joke in our family about kale. None of us had ever had it before. My mom, who is usually a suberb cook, fixed it somewhat like spinach. My brother-in-law, who has a stomach of iron, and will eat anything, took a big mouthful. The look on his face before he made a dead run for the bathroom was hilarious. Mom, or any of the rest of us, has never attempted kale again! I'm sure your recipe is much better! Thank you for sharing it at What We Accomplished Wednesdays.
