Balsamic Chicken with Brussels Sprouts

I am continuing my quest to eat low carb. I have found some recipes that I am either trying or making changes to. This recipe for Balsamic Chicken with Brussels Sprouts originally called for adding tomatoes. Since I am not a tomato fan, I needed to add a vegetable that would work with the chicken - Brussels sprouts. The combination was amazing.

Amaryllis for Easter

I bought some amaryllis plants a couple of years ago. They were in the clearance section at Home Goods. I wrote a post about the containers they came in and they bloomed beautifully. I was concerned that they would not bloom again but the next year they did and now two years later, they are blooming again. I am so thrilled.
