No Bake Lemon Peep Cake

As you prepare for Easter dinner, it is always nice to be able to make a dessert that you can make the day before and it doesn't need to be baked.  Layers of vanilla cookie crumbs, fluffy cream cheese mouse and creamy lemon pudding add up to one scrumptiously delicious "cake" that needs no baking.

No Bake Lemon Peep Cake

Ingredients:

1 pkg. (11 oz.) vanilla wafer cookies

½ cup butter, melted

1 pkg (8 oz.) cream cheese, softened

¼ cup sugar

2 tbs. + 3 ¼ cups 2 % reduced fat milk (or whatever you choose)

1 ½ conts. (12 oz.) each) thawed frozen whipped topping

2 pkgs. (3.4 oz. each) lemon flavored instant pudding

30 peeps Marshmallow Chicks, yellow

Yellow sprinkles, optional

Directions:

  1. In food processor, process vanilla wafers until crumbs. Add butter and pulse until all crumbs are moistened. Press crumb mixture into bottom of 13 X 9 inch pan.

  2. Beat cream cheese on medium-low until light and fluffy, about 2 minutes. Add sugar and 2 tbs. Milk; beat until combined. Stir in 1 ¼ cups whipped topping; spoon over crumb mixture.

  3. In medium bowl, beat pudding and remaining 3 ¼ cups milk and whisk for 2 minutes. Pour over the cream cheese layer. Refrigerate for 15 minutes. 

  4. Spread remaining whipped topping over cake. Refrigerate for at least 4 hours. 

  5. To serve, cut into 24 pieces and top each piece with a peep. Store in refrigerator.
