BLT Dip
I love making dips, do you? I find that there are just so many wonderful recipes and I sometimes would just rather eat dips than a dinner. So I decided to have a dip party dinner. It was just family. I asked everyone to bring a dip. They had to tell me what they were bringing so there would not be duplicates.
I decided to make this BLT Dip. The best part about the dip is that it is best to make it the night before. My kind of dip.
Since I had never made this before, I checked reviews. The original recipe calls for 2 pounds of bacon. I was having a hard time seeing that much bacon being used. After reading the reviews, I took suggestions from several and came up with mine.
I only used 1 pound of bacon and that was plenty. I also used Rotel tomatoes with green chilies although you can use fresh tomatoes. (that's what the recipe calls for) Just make sure you drain the Rotel very well.
I cut the bacon into sections so it would cook faster. One person used real bacon bits. That's your choice. I saved some bacon and Rotel tomatoes to put on top.
Aside from cooking the bacon, the recipe is rather easy. Mix mayo, sour cream, bacon, Rotel tomatoes and green onions together and chill over night. Serve with crackers, chips, or my favorite Stacies Chips.
Everyone loved it and wanted the recipe. It is definitely a keeper. This would be great for the 4th of July.

2 cups mayo
1 cup sour cream
1 pound bacon, cooked and crumbled
1 can Rotel Tomatoes with Green Chilies, well drained (or 6 fresh tomatoes, diced)
3 green onions, chopped
Additional bacon and diced green onions
Assorted crackers, chipsDirections:
In a large bowl, combine the sour cream, mayonnaise, bacon, tomatoes and onions. Refrigerate until serving. Garnish with bacon and onions if desired. Serve with crackers or chips.
