Chicken and Salsa Dish
When it comes time for dinner, sometimes I like a quick and easy meal. Although this meal may not be ready in under 30 minutes (around 45) it is easy to put together.
The salsa for this chicken can be anything you want. I used a peach salsa, because that is what we like. I also used chives, since that is what I had, but you can also use green onions.

Chicken and Salsa Dish
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tsp cumin
- 1 tsp garlic powder
- 1 cup salsa
- 1 cup mozzarella cheese. Shredded
- Chives for garnish
Directions:
- Preheat oven to 350 Degrees F
- Add chicken breasts to casserole dish.(If they are thick ones, slice them in half.) Sprinkle with cumin and garlic powder. Bake for 15 minutes.
- Remove chicken from oven and cover with salsa and mozzarella cheese. Put back in oven and bake for an additional 20 to 30 minutes, or until chicken reads 165F on a meat thermometer.
- Top with chives or green onions.
