Dressed Up Cornbread
This Apricot pecan cornbread went together so quickly since I used a box mix. I like to make my own, but sometimes you just want quick.
I always have pecans so I chopped them up and then found some dried apricots and chopped them up. I added the pecans and the apricots along with 2 tablespoons brown sugar to the box mix that I made according to the package. Bake as the label directs.
It was a great breakfast treat. I don't have "bread" things too often, but it is nice once in awhile.
You could easily add fresh blueberries or raspberries with some grated lemon and almonds. Have you experimented with cornbread? Any ideas?
For a savory version, add chopped bacon, sliced green onions and some cheddar cheese. Maybe add some ham and some rosemary.
Many options for both sweet and savory. Of course you can make homemade cornbread instead of using a box mix. Create your own version!

Dressed Up Cornbread
Ingredients:
¼ cup chopped pecans
¼ cup chopped dried apricots
2 tbsp. brown sugar
1 box prepared cornbread mix
Directions:
Stir the chopped pecans, chopped apricots and brown sugar into prepared cornbread mix. Bake according to package directions.
Serves 4.
