Crispy Baked Zucchini Fries

I love crunchy food but hate the idea of frying them, so if I can bake them, I am all in. These baked zucchini fries were crispy and golden brown.

Grab two shallow bowls or plates and put flour on one and Panko bread crumbs with the seasonings on the other one. Then in a pie pan or shallow bowl add the beaten eggs. 

This will be the breading station. Cut the zucchini in half lengthwise and then in half crosswise. Cut each piece into 1/4 in slices. 

Dip in flour and then into egg and finally into the Panko bread crumb mixture. Place on a grease rack in a foil lined rimmed baking pan. Drizzle with oil and bake @ 425 for 20 -25 minutes. Then enjoy!

I served mine with a homemade horseradish sauce. Hubby loved them and so did I.

Crispy Baked Zucchini Fries



Ingredients:
2 medium zucchini
1 cup Panko bread crumbs
3/4 cup grated Parmesan cheese
2 tsp. smoked Paprika
1/2 tsp. garlic powder
1/4 tsp. ground chipotle pepper
1/4 tsp. salt
1/4 tsp. pepper
1/3 cup all-purpose flour
2 large eggs, beaten
3 Tbsp. olive oil

Directions:
1. Preheat oven to 425 degrees.

2.  Cut the zucchini in half lengthwise and then in half crosswise. Cut each piece into 1/4 in slices. 

3. In a shallow bowl mix bread crumbs, cheese and seasonings. Place flour and eggs in separate bowls. 

4. Dip zucchini into flour, then egg and finally into bread crumbs, patting to help coating adhere. 

5. Place on a greased rack set into a foil lined rack. Drizzle with oil and bake until golden brown about 20 - 25 minutes.
