Tea and Cherry "Light" Scones

Nothing like enjoying a cup of tea or coffee and a warm cherry scone. Yum! 

I love scones, but I hate all of the calories. So I decided to find a way to make them with a lot less calories than my original version. This version can be adapted to add what ever fruit you like best.

My two teas cups are different. The top one is a Royal Minster and the bottom one is Adderley. I love the dainty flowers on them. They were both made in England.

I placed the scones in a white ceramic strawberry basket and added ribbon and a ribbon flower.

The child's wooden shoe I painted years ago. It is so small and cute. I added a silk bouquet on the top.

Electic Red Barn: Cherry Scones in White Ceramic Strawberry Basket 

This is a lighter version of a classic scone recipe, saving you almost 200 calories.

Ingredients:
2 cups flour
½ cup light brown sugar
2 tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
3 Tbs. cold butter, cut into small pieces
⅔ cup buttermilk
¼ cup refrigerated liquid egg substitute, such as Egg Beaters
1 tsp. grated orange zest
⅓ cup dried cherries or cran raisins chopped

Directions:

1. Preheat oven to 400 degrees. Coat baking sheet with cooking spray.
2. In bowl, combine flour, sugar, baking powder, soda and salt.
3. With pastry blender or two knives, cut in butter until mixture resembles coarse meal.
4. Stir in buttermilk, egg substitute and zest until soft dough forms. Stir in cherries.
5. On lightly floured surface with floured hands, knead until dough comes together.

The dough will be quite sticky when you turn it onto the floured surfaced.

Add enough flour so that it is not sticky.
6. Pat into a rectangle or circle.
7. Using a floured cutter, cut out scones, re-rolling scraps as necessary. I used a heart shaped one for these.
8. Place on baking sheet about 2 inches apart.(Notice mine aren’t 2 in. apart, no problem)

9. Bake 10-12 minutes or until golden. (I bake for 11 min and it is perfect, but it will depend on your oven) Don’t over bake.


You can serve them with preserves, butter or just eat them plain.
* They freeze well. 
They are about 240 calories each. Not bad since the original version, contained 442 calories.
