Fresh Peach Cobbler
Well, as you may know, I brought back lots of peaches from the farm. I made peach hand pies and now it was time for peach cobbler. I am not sure if peach cobbler or peach pie is hubby's favorite dessert, but he does love them.
Now I don't know about you but I have tried lots of cobbler recipes. Some good and some not so good. This one is my favorite and hubby's too. But if you have a great one, let me know.
Hubby does not like oatmeal toppings although he will eat it. This recipe calls for making the syrup and then adding the peaches but not cooking them. Add them to a pan and bake for 10 minutes and then add the topping and bake for 30 minutes.
I used an 8 inch pan and add plenty of topping. If you wanted to make this in a 9 X 13 inch pan, I would double the topping recipe and of course add more peaches.

Ingredients:
- 8 fresh peaches - peeled, pitted and sliced into slices
- ¼ cup white sugar
- ¼ cup brown sugar
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 tsp. cornstarch
- 1 cup all-purpose flour
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- ¼ cup boiling water
Mix Together
- 3 tablespoons white sugar
- 1/2 tsp cinnamon (you can add more if you want)
Directions:
1. Heat oven to 425 degrees F (220 degrees C)
2. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
3. Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
4. Remove peaches from the oven, and drop spoonfuls of topping over them. Sprinkle the entire cobbler with the sugar and cinnamon mixture. Bake until the topping is golden, about 30 minutes. Serve with whipped cream or ice cream while still warm.
