Do you like Mexican food? We love it. My husband would choose a Mexican restaurant over any other restaurant. So I wanted to make some Mexican food that we could eat at home. I have made enchiladas with a bechamel sauce but this time I decided to make a tomato base sauce.

I know that if you are up north, you might be experiencing some really cold weather and snow. My sister said they didn't get as much snow in western PA but lots of ice. It rained and then turned cold. She said she ran her car for 45 minutes, just to get the ice off.  Hope you are all safe and warm.

I am not sure why, but I love to make bundt cakes. Maybe it's the look of a bundt cake or maybe I just like to tell my husband I made a "bundt" cake. Remember that scene from "My Big Fat Greek Wedding" when the mother brings a bundt cake to their house. That part always makes me laugh. She ends up putting a flower in the center.

 

Well, I digress, back to my bundt cake. This one is made with coconut. My husband is not a big coconut fan, but he loved this cake. The cake is very moist and just heavenly. Can a cake be that - heavenly?

It is the middle of January and we are having "winter weather". Now don't laugh at me, since many places are having really cold temps and snow, but it is cold for us. It was 51 this morning! Yikes! that is cold for southern Florida. The best part is that even though it was cold in the morning, it warmed up to 75 later in the day. As long as it warms up, I am OK with some cooler weather. All of you up north that are dealing with cold weather, I hope it warms up.

Can you believe that we are already in the middle of January? I have been working on some major cleaning. I have cleaned out all of my closets in the bedroom, my buffet in the dining room, and a couple of other cupboards. Next I am starting on my pantry. It's not spring cleaning, but just wanted to get things cleaned up and organized.

I am so glad you stopped by. January has gotten off to a great start now that I am better. The weather cooled down some and it was a nice change.  I got out a sweater and my high boots. I don't get to wear them very often. I was so excited.  Isn't it funny how little things can make you happy!

Buying the Right Drapes

Buying drapes is no easy task!

Any decorator will tell you, curtains make a room, but only when chosen correctly. When it comes to window treatments, it's a matter of color and fabric, length and lining, and custom-made versus off-the-shelf. With so many decisions, it's easy to feel overwhelmed. 

I was at this point. I needed some drapes for my lanai. Now most might think that it is only an outdoor place, so what's the problem. Well, on the right side of the lanai is where the sun shines most of the afternoon. I don't want my furniture to be exposed to all of that sun.  (Now I must admit that I have not put all of my furniture on the lanai yet, I will explain that in another post.) 

I was compensated for these drapes but all opinions are my own.

Key Lime Pie Cupcakes

When your key limes are all ripening at the same time, make cupcakes.  I have made lots of cupcakes in my time, but these were the best ever. Maybe, because I love the flavor of key limes.  I sent them into my husband's work, and they said, "they were over the top".

The key lime filling was amazing and the graham cracker topping took them over the top. The best part is you start with a box cake mix.
