I am one of those people that doesn't like too much dressing. I err on the light side. What I do like is to add grapes and nuts. I like cashews, but you could use almonds, walnuts, or pecans. There is just something about the saltiness of cashews that is my favorite.
Some recipes say to mix all the ingredients together, including nuts and grapes and allow to chill. I find that the nuts get soft. So I add mine when I am ready to serve. It is not that much extra work to cut up some grapes and sprinkle on the nuts. But that is up to you!
I served ours on lettuce leaves, but you could always make a sandwich. Croissants are rather nice with this. Enjoy!

Yummy Chicken Salad
INGREDIENTS
- 3 - 4 lbs chicken, cooked (You'll need about 4 cups, you can use roasted chicken)
- 2 tbsp olive oil
- 1 cup seedless grapes, halved (red and green varieties are great)
- 1 cup cashews, sliced
- 2 celery ribs, chopped
- 1 tbsp fresh parsley, chopped
- 1 cup mayonnaise
- Juice of 1 lemon
- 1 tbsp Dijon mustard
- 1 tsp Kosher salt(start with 1/2 teaspoon, then add more, to taste)
- Freshly ground pepper
INSTRUCTIONS
- Chop cooked chicken into pieces.
- In a large bowl, mix together the chicken, celery, and parsley.
- In a small-medium bowl, mix together the mayonnaise, lemon, mustard, salt and pepper.
- Add the mayo/mustard mixture to the chicken mixture and gently stir until well mixed.
- Cover with plastic wrap and refrigerate for at least an hour.
- When ready to serve, add sliced grapes and cashews. Mix together.
- Serve on bread with green leaf lettuce or just lettuce leaves. Add more toppings to your taste!
