I have had this apple cake recipe for years but have not made it in quiet some time. I guess I just needed those apples!
This is an easy recipe to whip up. The most time consuming part is peeling and chopping the apples. You can probably use only 2 apples but we like lots of apples in this dish so I put in 3 apples.
The smell of apples and cinnamon while cooking was lovely. My husband was eating it while it was still warm. Later he added whipped cream on top.
I sent some into work and it was a hit. You could have it as a dessert, for breakfast, or afternoon tea.

Fresh Apple Cake
Batter Ingredients:
1 1/2 cups brown sugar
1/3 cup oil
1 egg
1 cup buttermilk (you can sub milk & vinegar)
1 teaspoon baking soda
1 teaspoon vanilla
1 1/2 cups flour
1 cup whole wheat flour (or you can use all white flour)
1 1/2 cups chopped apples (I used 3 Granny Smith apples)
Batter Topping:
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter
Directions:
1. Preheat oven to 325.
2. Add all ingredients for batter and mix well.
3. Pour batter into a 9×13 greased pan.
4. Combine ingredients for batter topping and sprinkle it evenly over the batter.
5. Bake for 45 minutes. You can eat it plain or serve it warm with some whipped cream or ice cream!

sounds perfect and easy to make. have you ever tried not peeling the apples? may not work in a pie but it often works in a cake. i'll try it and let you know.
