I think people either love curry or hate it. Which side are you on? If you hate it, leave out the curry. I did once and it was still really good. (That's another story)
Also if you are doing the low carb thing, this is great over cauliflower rice which I am showing here.
All the spices makes this dish tasty and it goes together quickly.
I made the Basmati rice for my husband and cauliflower rice for me.
I used already shredded carrots and peas. Edamame (shelled) was also great in this dish. Hope you enjoy!

TURKEY CURRY
Ingredients:
· 1 lb ground turkey or beef
· 1 tbsp curry powder (add more as needed)
· 1 1/2 tsp of salt
· 1 tsp pepper
· 1 tsp cumin
· 1 tsp onion powder
· 1 tsp garlic powder
· 1 tsp turmeric
· 2 tsp coconut oil (more as needed)
· 1 cup grated carrots
· 1 small chopped onion
· 1/2 cup of frozen peas
· 1-2 tbsp maple syrup or coconut syrup
· 2 tbsp water
· Optional 1/2 tsp cayenne pepper
· Basmati rice or your favorite rice (cooked according to package directions)
Directions:
1) Add 1 tbsp coconut oil to pan, add ground turkey and cook through.
2) Add veggies and remaining coconut oil.
3) Mix then add salt, pepper, spices and maple syrup, mix.
4) Add 2 tbsp of water and let simmer with a cover while veggies cook, about 10 minutes. Mix all flavors again.
5) Serve on a bed of Basmati Rice or your favorite rice
6) Garnish with cilantro
