When I told my husband that I made mac and cheese, he was so excited. Then he looked at me and said, is there pasta in it? Well, no was my reply. Cauliflower instead of noodles. Poor guy, I never make pasta anymore.
He liked it very much anyway and began to dish it out even before I could get a picture. That's always a good sign.
Other than the texture being different with the cauliflower, it tasted like mac and cheese. The cheese sauce makes it so yummy.
So if you have been craving mac and cheese but without all of the carbs, this is for you.

Cauliflower Mac and Cheese
Ingredients:
· 4 cloves Garlic (optional)
· 48 oz Cauliflower
· 1 1/3 cups Heavy Cream
· 4 oz Cream Cheese
· 2 tsps Dry Mustard
· 2 cups Classic Cheddar Jack Cheese
· 1/2 tsp Original Frank’s Sauce
Directions:
· 1) Preheat oven to 375ºF. Spray a baking dish with non-stick spray. Finely chop the garlic and set
aside. Bring a large sauce pot with 4 cups of water and ½ teaspoon salt to a boil over high
heat.(You can probably use frozen cauliflower also)
· 2) Cut the cauliflower into bite-sized pieces and add to the water when it begins to boil. Cook for 5
minutes, or until crisp-tender. Drain in a colander and lay on paper towels to dry.
· 3) Pour the whipping cream into a medium sauce pot over medium-high heat. When the cream begins
to simmer, whisk in the cream cheese and the powdered mustard until smooth. Add half of the
shredded Cheddar cheese, garlic, ¼ teaspoon of salt and ¼ teaspoon of pepper and the Frank’s
sauce, whisking until the cheese melts, about 1 to 2 minutes.
· 4) Remove the cheese sauce from the heat and stir in the cauliflower, making sure the cauliflower is
well coated. Pour into the baking dish and add the remaining cheddar cheese. Place in the oven
and bake for 15 – 20 minutes, until browned and bubbly.

DeleteI so glad that I could marry those two foods favorites of your daughters. Who doesn't like mac and cheese, but most kids don't like cauliflower.

Pinned. I just threw out a head of cauliflower that had gone bad while we were out of town. Going back out of town tomorrow. But as soon as I get home for five minutes, I am going to make this and your pb ripple brownies. Can't wait.
