How about Chipotle and Black Bean Guacamole?
This is a healthy and easy to put together dip. I like them with Lime Nachos, but I am sure any chip would be fine. (Watch the number of chips however. )
Chipotle and Black Bean Dip:
1/2 cup drained and rinsed black beans
1/3 cup chopped cilantro
2 seeded and diced chipotles in adobo
2 tbsp lime juice
1 tsp adobo sauce
3/4 tsp kosher salt
In a bowl, mash together 3 peeled and pitted avocados. Fold in 1/2 cup drained and rinsed black beans, 1/3 cup chopped cilantro, 2 seeded and diced chipotles in adobo, 2 tbsp lime juice, 1 tsp adobo sauce and 3/4 tsp kosher salt. Makes 2 cups.
